- 1 whole chicken (4 to 5 pounds)
- 4 cups water
- 1/2 cup kosher salt
- 1/4 cup sugar
- 4 sprigs fresh thyme
- 2 bay leaves
- 1 teaspoon black peppercorns
- 4 cups ice
Instructions:
- In a large pot, combine the water, kosher salt, sugar, thyme, bay leaves and peppercorns. Bring to a boil, stirring until the salt and sugar dissolve.
- Remove the pot from the heat and add the ice to cool the mixture.
- Once the brine has cooled, pour it into a large container or plastic bag that is large enough to fit the chicken.
- Add the chicken to the brine, making sure that it is fully submerged.
- Refrigerate for at least 2 hours, or up to 8 hours, turning the chicken occasionally.
- Preheat a grill to medium-high heat.
- Remove the chicken from the brine and pat it dry with paper towels.
- Grill the chicken, turning occasionally, until the internal temperature reaches 165°F, about 1 hour to 1 hour and 15 minutes.
- Let the chicken rest for 10 minutes before carving and serving.
Easy Healthy Chicken and Asparagus Skillet
Ingredients:
- 1 whole chicken (4 to 5 pounds), cut into pieces
- 1 pound asparagus, trimmed and cut into 2-inch pieces
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, garlic, salt and pepper.
- Preheat a large skillet over medium-high heat.
- Add the chicken to the skillet and cook, turning occasionally, until browned on all sides, about 5 to 7 minutes.
- Add the asparagus to the skillet and pour the sauce over the top.
- Cover the skillet and cook until the chicken is cooked through, about 10 to 12 minutes.
- Remove the skillet from the heat and let it rest for 5 minutes before serving.
