Chicken breast is a staple ingredient in any household, especially when it comes to feeding the picky eaters that we love dearly. Here are two of my top recommended chicken breast recipes that will not only satisfy the taste buds of your little ones, but also keep them healthy and happy.
Kid Friendly Chicken Tender
Ingredients:
- 1 pound of boneless, skinless chicken breast
- 1 cup of panko breadcrumbs
- 1/2 cup of grated parmesan cheese
- 1/4 tsp of garlic powder
- 1/4 tsp of onion powder
- 1/4 tsp of paprika
- 1/4 tsp of salt
- 1/4 tsp of pepper
- 1/2 cup of all-purpose flour
- 2 large eggs, beaten
- 1/4 cup of unsalted butter
Instructions:
- Preheat oven to 425°F. Line a baking sheet with foil and spray with cooking spray.
- Mix together the breadcrumbs, parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper. Set aside.
- Set up a coating station using three shallow bowls. Fill one bowl with flour, one with beaten eggs, and the last with the breadcrumb mixture.
- Cut the chicken breasts into strips and dredge into flour, then the egg mixture, and finally the breadcrumb mixture.
- Melt the butter in a microwave-safe bowl. Dip the chicken strips into the melted butter and place on the prepared baking sheet.
- Bake for 15-20 minutes, flipping halfway through, until golden brown and crispy.
The Best Chicken Marinade
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup of olive oil
- 1/2 cup of soy sauce
- 1/4 cup of honey
- 1/4 cup of Worcestershire sauce
- 2 tsp of dried basil
- 1 tsp of dried oregano
- 1 tsp of garlic powder
- 1/2 tsp of pepper
Instructions:
- Mix all ingredients together in a bowl or large Ziploc bag.
- Add chicken breasts to the bowl or bag and coat them evenly with the marinade. Marinate in the refrigerator for at least 30 minutes or up to 24 hours.
- Preheat grill to medium-high heat. Remove chicken from marinade and discard excess marinade.
- Grill chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F. Let the chicken rest for a few minutes before slicing and serving.
